Cranberry Jalapeno Salsa

If you are looking for something different for your holiday menus, or just the upcoming cold winter days, here are two recipes I've enjoyed for years.

1 medium orange, washed and quartered

4 large pieces candied ginger
Zest, (grated peel) of one small lime

1 to 3 fresh jalapeño pepper, seeded

1 medium onion

1 tablespoon fresh cilantro leaves, chopped

2 cups fresh cranberries, picked over.

Using a steel blade, chop candied ginger in food processor. Add orange, jalapeño pepper, and onion. Chop until fine. Add zest of lime, cilantro leaves, and cranberries. Pulse several times until coarsely chopped.

This is best if made a day ahead of when you plan to serve it.
