Two Sided Cornbread

To do this recipe, you will need two cast iron skillets that are the same diameter around. Put the skillets on the campfire grate to preheat, then melt the butter in them. Be sure that they are completely coated.

Sift together: ( Do this ahead of time to make it easier for camping. )

¾ cup corn meal

1 cup flour
1/3 cup sugar
3 teaspoons baking powder
½ teaspoon salt

Mix in:

1 cup milk
1 egg

2 tablespoons butter, melted

Pour batter into skillet. Place skillet on the edge of the fire and “bake” about 10 minute.The batter will bubble. Place other skillet over the corn bread. Carefully flip it over and bake other side 10 more minutes, or until firm and center test done.
